Japanese Fusion Miso Fish

This recipe was created by chef Bill Granger in his book ‘Feed Me Now!’. It’s a very tasty and healthy dish overall except for its high sodium content due to the amount of miso paste. I have reduced it so that it is within the healthy range without losing the Japanese Fusion spin.

Cooking time: ~25 mins

Ingredients

(Serves 2)

  • 2 x 200g pieces firm white fish fillet (I use barramundi fillet)
  • 2 teaspoond miso paste
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon extra virgin olive oil
  • Finely sliced shallot
  • Pinch of sesame seeds

Method

  1. Place the fish on a lightly oiled baking tray. Preheat the oven to 200oC
  2. Stir the miso paste, sugar, lemon juice and olive oil together in a bowl to combine
  3. Brush the fish with the miso mixture on one side
  4. Put the fish fillet in the oven for 10-11 minutes or until the fish is about cooked through
  5. Add sliced shallot and roughly sprinkle sesame seeds
  6. Put the fish back in the oven for one more minute
